These are some of Grant’s favorite cookies. The tops are crinkly and insides are chewy. The recipe comes from Sunset Cookies. I usually double the recipe. It is a popular cookie so I often make them to share. I like that I can whip up the dough and bake the next day.
OLD-FASHIONED MOLASSES CHEWS
- 3/4 cup vegetable oil
- 1/4 cup dark molasses
- 1 1/4 cups sugar
- 2 eggs
- 2 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon EACH ground cinnamon and ginger
- 1/4 teaspoon ground cloves
In a large bowl, stir together oil, molasses, and 1 cup of the sugar. Add eggs and beat until smooth. In another bowl, stir together flour, baking soda, cinnamon, ginger, and cloves; gradually add to molasses mixture, beating until well combined. Cover tightly with plastic wrap and refrigerate for at least 2 hours or until next day.
Place remaining 1/4 cup sugar in a small bowl. Roll dough into 1 1/2-inch balls, then roll in sugar to coat. Place 3 inches apart on greased baking sheets. Bake in a 350° F. oven for 10 to 12 minutes or until lightly browned. {Make sure to not overbake.} Transfer to racks and let cool completely. Store airtight. Makes about 2 1/2 dozen.
