Many of my family members like hummus. Joel and Austin like it with pita chips. My Mom uses vegetable sticks to dip. I received this recipe some years ago from a dear friend, Diane. I set the recipe aside and never made it until last year when we depended on the food bank for groceries during a period of unemployment. We were given a case of chickpeas and so I found the recipe again and made hummus. Now I regularly make it since Joel loves hummus. Tahini is simply ground sesame seeds and is easy to find in the grocery store. This is very quick and easy.
HUMMUS
- 2 15-ounce cans chickpeas or garbanzo beans, drained
- 1/2 cup reserved chickpea liquid
- 6 tablespoons lemon juice
- 1/3 cup tahini
- 2-4 cloves garlic
- 1/2 teaspoon salt
- 3 tablespoons olive oil
- sprinkle of cumin and paprika
Combine all ingredients in a blender or food processor until smooth. May be served immediately or chilled first. Refrigerate for a couple weeks.
