Biscuits are such a great comfort food, so it is great to have a variety of recipes. The cornmeal adds a little more flavor while still being light and fluffy. These go well with other comfort foods, such as stews and soups. Try it as a topping for a pot pie too.
CORNMEAL BISCUITS
- 1 1/2 cups flour
- 1/2 cup yellow cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cold butter, diced
- 3/4 cup milk
Preheat oven to 425° F. Lightly butter a baking sheet.
In a large bowl, mix together the dry ingredients. Add the butter and cut it in until the mixture resembles coarse crumbs. Add milk and stir until dough adheres. Set aside for 2 minutes. Scrape the dough out onto a floured cutting board or other surface and knead a few times. Pat the dough to a 1/2-inch thick rectangle. Cut into 9-12 squares. Place on the baking sheet and bake for 12 minutes or so, until golden brown. Serve hot.
